Indian Spiced Breakfast Pasta

Ingredients:

  • 200 grams Pasta
  • 2 tablespoons Olive Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 cup Chopped Onion
  • 1 cup Chopped Tomatoes
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • 1/2 teaspoon Garam Masala
  • to taste Salt
  • 2 tablespoons Fresh Coriander Leaves

Instructions:

  1. Cook the pasta in boiling water until al dente, drain, and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the mustard seeds and cumin seeds. Once they start to crackle, add the chopped onion.
  3. Sauté the onion until it becomes transparent. Add the chopped tomatoes and sauté for another 5 minutes.
  4. Add the turmeric powder, red chili powder, garam masala, and salt to the pan. Stir well and cook for another 2 minutes.
  5. Add the cooked pasta to the pan and toss to combine everything. Cook for a further 2-3 minutes.
  6. Plate the pasta and garnish with coriander leaves before serving.
