
Indian Spiced Breakfast Pasta

Ingredients:
- 200 grams Pasta
- 2 tablespoons Olive Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Cumin Seeds
- 1 cup Chopped Onion
- 1 cup Chopped Tomatoes
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Red Chili Powder
- 1/2 teaspoon Garam Masala
- to taste Salt
- 2 tablespoons Fresh Coriander Leaves
Instructions:
- Cook the pasta in boiling water until al dente, drain, and set aside.
- In a large pan, heat the olive oil over medium heat. Add the mustard seeds and cumin seeds. Once they start to crackle, add the chopped onion.
- Sauté the onion until it becomes transparent. Add the chopped tomatoes and sauté for another 5 minutes.
- Add the turmeric powder, red chili powder, garam masala, and salt to the pan. Stir well and cook for another 2 minutes.
- Add the cooked pasta to the pan and toss to combine everything. Cook for a further 2-3 minutes.
- Plate the pasta and garnish with coriander leaves before serving.
