Indian Spiced Beef Curry

Ingredients:
- 2 lb beef chuck roast
- 2 tbsp vegetable oil
- 1 onion
- 3 garlic cloves
- 1 inch ginger
- 2 tomatoes
- 2 cups beef broth
- 2 tsp curry powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup chopped fresh coriander
Instructions:
- Cut the beef into chunks, season with salt and pepper.
- Heat the oil in a large pan over medium heat, add the beef and brown on all sides. Remove and set aside.
- In the same pan, add the chopped onion, garlic, and grated ginger. Cook for 5 minutes until the onions are soft.
- Add the chopped tomatoes, curry powder, garam masala, turmeric, and cayenne pepper. Cook for another 2 minutes.
- Return the beef to the pan, add the beef broth and bring to a simmer. Cover and cook for 2 hours until the beef is tender.
- Sprinkle with chopped coriander before serving. Serve with basmati rice or naan bread.
