Indian Spiced Beef Curry

Ingredients:

  • 2 lb beef chuck roast
  • 2 tbsp vegetable oil
  • 1 onion
  • 3 garlic cloves
  • 1 inch ginger
  • 2 tomatoes
  • 2 cups beef broth
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped fresh coriander

Instructions:

  1. Cut the beef into chunks, season with salt and pepper.
  2. Heat the oil in a large pan over medium heat, add the beef and brown on all sides. Remove and set aside.
  3. In the same pan, add the chopped onion, garlic, and grated ginger. Cook for 5 minutes until the onions are soft.
  4. Add the chopped tomatoes, curry powder, garam masala, turmeric, and cayenne pepper. Cook for another 2 minutes.
  5. Return the beef to the pan, add the beef broth and bring to a simmer. Cover and cook for 2 hours until the beef is tender.
  6. Sprinkle with chopped coriander before serving. Serve with basmati rice or naan bread.
