Indian Shrimp Curry

Ingredients:

  • 1 pound shrimp
  • 1 large onion
  • 3 garlic cloves
  • 1 inch ginger
  • 2 tablespoons canola oil
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 14 ounces can crushed tomatoes
  • 1 can coconut milk
  • salt to taste
  • fresh coriander for garnish

Instructions:

  1. Peel, devein and wash the shrimp.
  2. Chop onion, garlic, and ginger roughly.
  3. Heat oil in a large skillet over medium-high heat.
  4. Saute onion, garlic, and ginger till onion becomes translucent.
  5. Add curry powder and turmeric. Stir for a minute.
  6. Add crushed tomatoes and cook for 3-4 minutes until blended well.
  7. Stir in coconut milk, salt, and shrimp.
  8. Reduce heat to low, cover, and simmer for about 5-6 minutes until the shrimp are cooked.
  9. Garnish with fresh coriander before serving. Serve hot with rice or naan bread.
