
Indian Shrimp Curry

Ingredients:
- 1 pound shrimp
- 1 large onion
- 3 garlic cloves
- 1 inch ginger
- 2 tablespoons canola oil
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 14 ounces can crushed tomatoes
- 1 can coconut milk
- salt to taste
- fresh coriander for garnish
Instructions:
- Peel, devein and wash the shrimp.
- Chop onion, garlic, and ginger roughly.
- Heat oil in a large skillet over medium-high heat.
- Saute onion, garlic, and ginger till onion becomes translucent.
- Add curry powder and turmeric. Stir for a minute.
- Add crushed tomatoes and cook for 3-4 minutes until blended well.
- Stir in coconut milk, salt, and shrimp.
- Reduce heat to low, cover, and simmer for about 5-6 minutes until the shrimp are cooked.
- Garnish with fresh coriander before serving. Serve hot with rice or naan bread.
