
Indian Rice Kheer

Ingredients:
- 1 cup Basmati Rice
- 4 cups Milk
- 3/4 cup White Sugar
- 1/2 cup Assorted Nuts (almonds, cashews, raisins)
- 1 teaspoon Cardamom Powder
- A few Saffron Strands
Instructions:
- 1. Rinse the basmati rice under cold water until the water runs clear. Then, soak it for 15 minutes.
- 2. While your rice is soaking, heat up the 4 cups of milk in a large pot on medium heat.
- 3. After the rice has soaked, drain it and add it to the pot of milk.
- 4. Allow the milk and rice mixture to come to a boil, then reduce the heat to low and let it gently simmer for around 30-35 minutes, stirring occasionally.
- 5. As the kheer starts to thicken, add in the sugar, cardamom powder, and saffron strands.
- 6. Keep stirring the mixture for another 10 minutes.
- 7. Serve the Kheer topped with the assorted nuts. You can enjoy it hot or cold.
