Indian Rice Kheer

Ingredients:

  • 1 cup Basmati Rice
  • 4 cups Milk
  • 3/4 cup White Sugar
  • 1/2 cup Assorted Nuts (almonds, cashews, raisins)
  • 1 teaspoon Cardamom Powder
  • A few Saffron Strands

Instructions:

  1. 1. Rinse the basmati rice under cold water until the water runs clear. Then, soak it for 15 minutes.
  2. 2. While your rice is soaking, heat up the 4 cups of milk in a large pot on medium heat.
  3. 3. After the rice has soaked, drain it and add it to the pot of milk.
  4. 4. Allow the milk and rice mixture to come to a boil, then reduce the heat to low and let it gently simmer for around 30-35 minutes, stirring occasionally.
  5. 5. As the kheer starts to thicken, add in the sugar, cardamom powder, and saffron strands.
  6. 6. Keep stirring the mixture for another 10 minutes.
  7. 7. Serve the Kheer topped with the assorted nuts. You can enjoy it hot or cold.
