
Indian Prawn Curry

Ingredients:
- 500 grams Prawns
- 2 medium Onion
- 2 large Tomatoes
- 4 pieces Garlic cloves
- 1 inch piece Ginger
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- 1 teaspoon Coriander powder
- 2 sprigs Curry leaves
- 400 milliliters Coconut milk
- to taste Salt
- 2 tablespoons Oil
Instructions:
- Clean and devein the prawns. Rinse them under running water and set aside.
- Finely chop the onions, tomatoes, garlic, and ginger.
- Heat oil in a pan, add curry leaves and let them splutter.
- Add the chopped onions and sauté until they turn translucent.
- Add the ginger and garlic to the pan and sauté for another minute.
- Now, add the chopped tomatoes and sauté until they turn mushy. Add turmeric powder, chili powder, and coriander powder. Mix well until the spices are well incorporated.
- Add the cleaned prawns to the pan and stir well. Cook it for about 5 minutes until the prawns start to get a bit firm.
- Pour the coconut milk into the pan and let it come to a boil. Lower the heat and let the curry simmer for another 10 minutes until the prawns are cooked through.
- Season with salt according to taste. Serve the prawn curry hot with steamed rice.
