Indian Pork Vindaloo

Ingredients:

  • 2 lbs Pork shoulder
  • 1 cup Vinegar
  • 3 inches Fresh ginger root
  • 5 cloves Garlic
  • 1 tsp Ground turmeric
  • 2 tsp Kashmiri red chili powder
  • 1 tsp Ground cumin
  • 2 tsp Ground coriander
  • 1 Cinnamon stick
  • 1 tsp Mustard seeds
  • 5 Cloves
  • 4 Cardamom pods
  • 1 large Onion
  • 2 tbsp Oil
  • to taste Salt
  • 1 cup Water

Instructions:

  1. Cut pork into bite-sized chunks and marinate with the vinegar, ginger, garlic, turmeric, chili, cumin, and coriander for at least an hour in the refrigerator.
  2. Heat oil in a large pan over medium heat. Add cinnamon, mustard seeds, cloves, and cardamom. Cook until mustard seeds begin to pop.
  3. Add the chopped onion and saute until golden brown.
  4. Add the marinated pork to the pan, add salt, and brown on all sides.
  5. Add water, cover the pan, and simmer for an hour or until the pork is tender.
  6. Serve the Pork Vindaloo with steamed basmati rice or naan bread.
