
Indian Pork Vindaloo

Ingredients:
- 2 lbs Pork shoulder
- 1 cup Vinegar
- 3 inches Fresh ginger root
- 5 cloves Garlic
- 1 tsp Ground turmeric
- 2 tsp Kashmiri red chili powder
- 1 tsp Ground cumin
- 2 tsp Ground coriander
- 1 Cinnamon stick
- 1 tsp Mustard seeds
- 5 Cloves
- 4 Cardamom pods
- 1 large Onion
- 2 tbsp Oil
- to taste Salt
- 1 cup Water
Instructions:
- Cut pork into bite-sized chunks and marinate with the vinegar, ginger, garlic, turmeric, chili, cumin, and coriander for at least an hour in the refrigerator.
- Heat oil in a large pan over medium heat. Add cinnamon, mustard seeds, cloves, and cardamom. Cook until mustard seeds begin to pop.
- Add the chopped onion and saute until golden brown.
- Add the marinated pork to the pan, add salt, and brown on all sides.
- Add water, cover the pan, and simmer for an hour or until the pork is tender.
- Serve the Pork Vindaloo with steamed basmati rice or naan bread.
