
Indian Masala Egg Fry

Ingredients:
- 4 whole Eggs
- 1 medium Onion
- 1 medium Tomato
- 2 pieces Green chillies
- 1 inch piece Ginger
- 3 cloves Garlic
- 1/2 teaspoon Cumin seeds
- 1 sprig Curry leaves
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon Garam masala
- to taste Salt
- 2 tablespoons Vegetable oil
Instructions:
- Hard boil the eggs, peel them and keep them aside.
- In a pan, heat the vegetable oil. Add cumin seeds and curry leaves.
- Chop the onions, tomatoes, green chillies, ginger and garlic. Add them to the pan and sauté until onions turn golden brown.
- Add turmeric powder, red chilli powder, coriander powder and garam masala. Mix well.
- Slice the boiled eggs in half and gently place them in the pan. Sprinkle salt to taste.
- Fry the eggs for a few minutes until they are well-coated with the masala.
- Serve the Indian Masala Egg Fry hot as a snack.
