Indian Masala Egg Fry

Ingredients:

  • 4 whole Eggs
  • 1 medium Onion
  • 1 medium Tomato
  • 2 pieces Green chillies
  • 1 inch piece Ginger
  • 3 cloves Garlic
  • 1/2 teaspoon Cumin seeds
  • 1 sprig Curry leaves
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala
  • to taste Salt
  • 2 tablespoons Vegetable oil

Instructions:

  1. Hard boil the eggs, peel them and keep them aside.
  2. In a pan, heat the vegetable oil. Add cumin seeds and curry leaves.
  3. Chop the onions, tomatoes, green chillies, ginger and garlic. Add them to the pan and sauté until onions turn golden brown.
  4. Add turmeric powder, red chilli powder, coriander powder and garam masala. Mix well.
  5. Slice the boiled eggs in half and gently place them in the pan. Sprinkle salt to taste.
  6. Fry the eggs for a few minutes until they are well-coated with the masala.
  7. Serve the Indian Masala Egg Fry hot as a snack.
