Indian Fish Curry Breakfast Bowl

Ingredients:

  • 2 piece white fish fillets
  • 1 tbsp curry powder
  • 2 cloves garlic
  • 0.5 piece onion
  • 2 piece tomatoes
  • 1 tbsp cooking oil
  • 200 ml coconut milk
  • to taste salt
  • to taste pepper
  • a bunch fresh coriander leaves
  • 1 cup rice
  • 2 cups water

Instructions:

  1. Cook rice according to package instructions, then set aside.
  2. While the rice is cooking, prepare the curry. Heat oil in a pan over medium heat.
  3. Chop the onion and garlic, then sauté in the pan until they become translucent.
  4. Cut the tomatoes into chunks and add them to the pan, along with the curry powder, salt, and pepper.
  5. Once the tomatoes are cooked down into a sauce, add the fish fillets. Cook for approximately 5-7 minutes, until the fish is cooked through and can easily be broken apart with a fork.
  6. Pour the coconut milk into the pan and reduce to a low heat. Let the curry simmer for a few minutes to allow the flavors to meld together.
  7. Serve the curry over the rice, garnished with fresh coriander leaves.
