
Indian Fish Curry Breakfast Bowl

Ingredients:
- 2 piece white fish fillets
- 1 tbsp curry powder
- 2 cloves garlic
- 0.5 piece onion
- 2 piece tomatoes
- 1 tbsp cooking oil
- 200 ml coconut milk
- to taste salt
- to taste pepper
- a bunch fresh coriander leaves
- 1 cup rice
- 2 cups water
Instructions:
- Cook rice according to package instructions, then set aside.
- While the rice is cooking, prepare the curry. Heat oil in a pan over medium heat.
- Chop the onion and garlic, then sauté in the pan until they become translucent.
- Cut the tomatoes into chunks and add them to the pan, along with the curry powder, salt, and pepper.
- Once the tomatoes are cooked down into a sauce, add the fish fillets. Cook for approximately 5-7 minutes, until the fish is cooked through and can easily be broken apart with a fork.
- Pour the coconut milk into the pan and reduce to a low heat. Let the curry simmer for a few minutes to allow the flavors to meld together.
- Serve the curry over the rice, garnished with fresh coriander leaves.
