
Indian Exotic Vegetable Uttapam

Ingredients:
- 1 cup Rice
- 1/2 cup Urad dal (Split black lentils)
- 1 teaspoon Fenugreek Seeds
- 1 cup Chopped mixed vegetables (Carrots, bell peppers, corn)
- 2 tablespoon Chopped fresh coriander
- 2 units Green chilies, finely chopped
- to taste Salt
- for cooking Oil
Instructions:
- Soak the rice, urad dal, and fenugreek seeds in plenty of water for 5-6 hours.
- Drain the water and blend them together in a blender to make a smooth batter by adding a little water. The batter should be of pouring consistency.
- Cover and ferment the batter in a warm place for a minimum of 12 hours.
- After the fermentation, the batter will become light and airy. Add salt to batter and mix well.
- Heat a non-stick pan and pour a ladle full of batter in the center. Do not spread it much. Sprinkle the chopped vegetables, green chilies, and fresh coriander on the top. Drizzle some oil on the sides and on top.
- Cook on medium flame until the bottom is browned and the top is set.
- Carefully flip the uttapam and cook the other side as well.
- Serve the Indian Exotic Vegetable Uttapam hot with coconut chutney or sambhar.
