
Indian Comfort Rice Pudding

Ingredients:
- 1 cup Basmati Rice
- 4 cups Milk
- 0.75 cup Sugar
- 6 Cardamom Pods
- 1 tbsp Ghee (or unsalted butter)
- 0.5 cup Golden Raisins
- 0.5 cup Sliced Almonds
Instructions:
- Soak the rice in water for 30 minutes, then drain and set aside.
- In a large saucepan, heat the ghee over medium heat. Add the cardamom pods and rice, stirring well to coat the rice with ghee.
- Add the milk and sugar to the saucepan, stirring well to mix. Bring the mixture to a simmer, then reduce heat to low. Cook for 30-40 minutes, stirring regularly, until the rice is tender and the milk has thickened to a creamy consistency.
- Add the raisins and sliced almonds to the pudding, stirring well to distribute. Cook for an additional 5 minutes.
- Pour the pudding into serving bowls, garnishing with a few extra almonds and raisins on top if desired. Serve hot, and enjoy your Indian Comfort Rice Pudding!
