Indian Comfort Rice Pudding

Ingredients:

  • 1 cup Basmati Rice
  • 4 cups Milk
  • 0.75 cup Sugar
  • 6 Cardamom Pods
  • 1 tbsp Ghee (or unsalted butter)
  • 0.5 cup Golden Raisins
  • 0.5 cup Sliced Almonds

Instructions:

  1. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large saucepan, heat the ghee over medium heat. Add the cardamom pods and rice, stirring well to coat the rice with ghee.
  3. Add the milk and sugar to the saucepan, stirring well to mix. Bring the mixture to a simmer, then reduce heat to low. Cook for 30-40 minutes, stirring regularly, until the rice is tender and the milk has thickened to a creamy consistency.
  4. Add the raisins and sliced almonds to the pudding, stirring well to distribute. Cook for an additional 5 minutes.
  5. Pour the pudding into serving bowls, garnishing with a few extra almonds and raisins on top if desired. Serve hot, and enjoy your Indian Comfort Rice Pudding!
