
Indian Comfort Rice Pilaf

Ingredients:
- 2 cups Basmati Rice
- 4 cups Water
- 2 tablespoons Vegetable Oil
- 1 teaspoon Cumin Seeds
- 1 leaf Bay Leaf
- half stick Cinnamon Stick
- 1 cup Green Peas
- quarter cup Sliced Almonds
- 1 teaspoon Salt
- half teaspoon Black Pepper
Instructions:
- Wash the rice under cold water until the water runs clear. Drain well.
- In a large pot, heat the oil over medium heat. Add cumin seeds, bay leaf, and cinnamon stick and saute for about a minute until fragrant.
- Add the drained rice to the pot and stir gently to coat the rice in the oil and spices. Let the rice toast for a couple of minutes.
- Pour in the water, add salt and pepper, and bring to a simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for 20 minutes until the rice is cooked and the water has evaporated.
- Stir in the green peas and sliced almonds. Cover the pot and let it sit for another 5 minutes to allow the peas to cook from the steam.
- Fluff the rice gently with a fork before serving. Enjoy your comforting Indian Rice Pilaf!
