Indian Comfort Rice Pilaf

Ingredients:

  • 2 cups Basmati Rice
  • 4 cups Water
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Cumin Seeds
  • 1 leaf Bay Leaf
  • half stick Cinnamon Stick
  • 1 cup Green Peas
  • quarter cup Sliced Almonds
  • 1 teaspoon Salt
  • half teaspoon Black Pepper

Instructions:

  1. Wash the rice under cold water until the water runs clear. Drain well.
  2. In a large pot, heat the oil over medium heat. Add cumin seeds, bay leaf, and cinnamon stick and saute for about a minute until fragrant.
  3. Add the drained rice to the pot and stir gently to coat the rice in the oil and spices. Let the rice toast for a couple of minutes.
  4. Pour in the water, add salt and pepper, and bring to a simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for 20 minutes until the rice is cooked and the water has evaporated.
  5. Stir in the green peas and sliced almonds. Cover the pot and let it sit for another 5 minutes to allow the peas to cook from the steam.
  6. Fluff the rice gently with a fork before serving. Enjoy your comforting Indian Rice Pilaf!
