Indian Chicken Cutlets

Ingredients:

  • 2 pieces skinless boneless chicken breasts
  • 2 tablespoons peanut oil
  • 1 onion
  • 1 green chili
  • 1 inch piece ginger
  • 2 pieces garlic cloves
  • 1/4 cup cilantro leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 egg
  • 1/2 cup breadcrumbs

Instructions:

  1. In a pan, heat oil over medium heat. Add finely chopped onions and green chili. Stir until onions are translucent.
  2. Add grated ginger and garlic. Stir and cook for another minute.
  3. Add finely chopped chicken, salt, turmeric, cumin, and coriander powders. Cook until chicken is no longer pink.
  4. Turn heat to low, add garam masala and cilantro leaves. Stir well and remove from heat. Let the mixture cool.
  5. Once cooled, shape the mixture into small patties/cutlets.
  6. Whisk egg in a bowl. In another bowl, spread breadcrumbs.
  7. Dip each cutlet into the egg, then roll in the breadcrumbs until it's well coated.
  8. In a pan, heat oil over medium heat. Add the cutlets and fry on both sides until golden brown.
  9. Serve hot with mint or tamarind chutney.
