
Indian Basmati Rice Poha

Ingredients:
- 2 cups Basmati Rice Flakes (Poha)
- 1 cup Water
- 2 tablespoons Vegetable Oil
- 1 teaspoon Mustard Seeds
- 1 Onion
- 2 Green Chillies
- 0.5 teaspoon Turmeric Powder
- to taste Salt
- 1 Lemon
- a handful Fresh Coriander Leaves
Instructions:
- Wash the rice flakes thoroughly and soak them in water for two minutes. Then drain the water and keep the soaked flakes aside.
- Heat the oil in a pan and add mustard seeds. As they start spluttering, add chopped onions and green chillies. Sauté until the onions turn translucent.
- Add turmeric powder and stir well. Now add the soaked poha and salt. Mix all the ingredients gently and cook on low heat for about ten minutes.
- Remove the pan from heat and squeeze a lemon over the poha. Mix well to spread the lemon juice evenly.
- Garnish with freshly chopped coriander leaves and serve hot.
