Indian Basmati Rice Poha

Ingredients:

  • 2 cups Basmati Rice Flakes (Poha)
  • 1 cup Water
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Mustard Seeds
  • 1 Onion
  • 2 Green Chillies
  • 0.5 teaspoon Turmeric Powder
  • to taste Salt
  • 1 Lemon
  • a handful Fresh Coriander Leaves

Instructions:

  1. Wash the rice flakes thoroughly and soak them in water for two minutes. Then drain the water and keep the soaked flakes aside.
  2. Heat the oil in a pan and add mustard seeds. As they start spluttering, add chopped onions and green chillies. Sauté until the onions turn translucent.
  3. Add turmeric powder and stir well. Now add the soaked poha and salt. Mix all the ingredients gently and cook on low heat for about ten minutes.
  4. Remove the pan from heat and squeeze a lemon over the poha. Mix well to spread the lemon juice evenly.
  5. Garnish with freshly chopped coriander leaves and serve hot.
