Hunan-style Spicy Pork Belly

Ingredients:

  • 1.5 pounds Pork belly
  • 3 tablespoons Soy sauce
  • 2 tablespoons Granulated sugar
  • 8 pieces Dry red chilies
  • 1 tablespoon Ginger
  • 4 pieces Garlic cloves
  • 2 stalks Green onions
  • 1 teaspoon Sichuan peppercorns
  • 2 tablespoons Cooking oil
  • 1 tablespoon Fermented black beans

Instructions:

  1. Cut pork belly into thin slices, then marinate in 2 tablespoons of soy sauce and the granulated sugar for 15 minutes.
  2. Chop the dry red chilies, ginger, garlic, green onions, and prepare the Sichuan peppercorns.
  3. Heat up the oil in a wok or skillet, then add in the chopped ingredients along with the fermented black beans. Stir fry until fragrant.
  4. Add in the marinated pork and the rest of the soy sauce. Stir fry until the pork is fully cooked.
  5. Cover the wok or skillet, reduce heat to low, and let it simmer for about 1 hour.
  6. Once the pork belly is tender and the sauce has reduced, remove from heat and serve immediately with a bowl of steamed white rice.
