Hunan-style Spicy Pork Belly

Ingredients:
- 1.5 pounds Pork belly
- 3 tablespoons Soy sauce
- 2 tablespoons Granulated sugar
- 8 pieces Dry red chilies
- 1 tablespoon Ginger
- 4 pieces Garlic cloves
- 2 stalks Green onions
- 1 teaspoon Sichuan peppercorns
- 2 tablespoons Cooking oil
- 1 tablespoon Fermented black beans
Instructions:
- Cut pork belly into thin slices, then marinate in 2 tablespoons of soy sauce and the granulated sugar for 15 minutes.
- Chop the dry red chilies, ginger, garlic, green onions, and prepare the Sichuan peppercorns.
- Heat up the oil in a wok or skillet, then add in the chopped ingredients along with the fermented black beans. Stir fry until fragrant.
- Add in the marinated pork and the rest of the soy sauce. Stir fry until the pork is fully cooked.
- Cover the wok or skillet, reduce heat to low, and let it simmer for about 1 hour.
- Once the pork belly is tender and the sauce has reduced, remove from heat and serve immediately with a bowl of steamed white rice.
