Homestyle Pork Roast

Ingredients:
- 3 pound boneless pork loin roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons vegetable oil
- 1 cup onion, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 2 cups chicken broth
- 2 cups potatoes, quartered
Instructions:
- Preheat the oven to 325 degrees F.
- Season the pork loin roast with salt, pepper, and garlic powder.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the pork loin roast and brown on all sides.
- Remove the roast from the skillet and place it in a roasting pan.
- In the same skillet, add the chopped onion, carrots, and celery, cooking until lightly browned.
- Transfer the vegetables to the roasting pan, placing them around the roast.
- Pour the chicken broth over the roast and vegetables.
- Cover the roasting pan with foil and place it in the preheated oven.
- Roast for 2 hours, then add the quartered potatoes to the pan.
- Continue roasting for an additional hour, or until the pork is tender and the vegetables are cooked through.
- Serve the roast with the vegetables and a bit of the pan juices.
