Homestyle Pork Roast

Ingredients:

  • 3 pound boneless pork loin roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons vegetable oil
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 cups chicken broth
  • 2 cups potatoes, quartered

Instructions:

  1. Preheat the oven to 325 degrees F.
  2. Season the pork loin roast with salt, pepper, and garlic powder.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the pork loin roast and brown on all sides.
  4. Remove the roast from the skillet and place it in a roasting pan.
  5. In the same skillet, add the chopped onion, carrots, and celery, cooking until lightly browned.
  6. Transfer the vegetables to the roasting pan, placing them around the roast.
  7. Pour the chicken broth over the roast and vegetables.
  8. Cover the roasting pan with foil and place it in the preheated oven.
  9. Roast for 2 hours, then add the quartered potatoes to the pan.
  10. Continue roasting for an additional hour, or until the pork is tender and the vegetables are cooked through.
  11. Serve the roast with the vegetables and a bit of the pan juices.
