Homemade Italian Pork Ragu

Ingredients:
- 2 tablespoons Olive oil
- 4 — Garlic cloves
- 1 — Red onion
- 2 — Carrots
- 2 — Celery stalks
- 1 pound Pork shoulder
- 2 cups Canned diced tomatoes
- 1 cup Red wine
- 2 tablespoons Tomato paste
- 1 sprig Fresh rosemary
- Handful — Fresh basil leaves
- To taste — Salt and pepper
Instructions:
- Heat olive oil in a large heavy-bottomed pot over medium heat.
- Add finely chopped garlic, onion, carrots, and celery; cook until softened.
- Add the pork shoulder to the pot and cook until browned on all sides.
- Add the canned tomatoes, red wine, tomato paste, rosemary, and basil to the pot. Season with salt and pepper.
- Cover the pot and let it simmer on low heat for an hour, or until the pork is tender and the flavors are well combined.
- Remove the rosemary sprig, shred the pork in the pot using two forks. Stir well to combine the meat with the sauce.
- Serve the ragu over cooked pasta and garnish with fresh basil. Buon Appetito!
