Homemade Italian Pork Ragu

Ingredients:

  • 2 tablespoons Olive oil
  • 4 Garlic cloves
  • 1 Red onion
  • 2 Carrots
  • 2 Celery stalks
  • 1 pound Pork shoulder
  • 2 cups Canned diced tomatoes
  • 1 cup Red wine
  • 2 tablespoons Tomato paste
  • 1 sprig Fresh rosemary
  • Handful Fresh basil leaves
  • To taste Salt and pepper

Instructions:

  1. Heat olive oil in a large heavy-bottomed pot over medium heat.
  2. Add finely chopped garlic, onion, carrots, and celery; cook until softened.
  3. Add the pork shoulder to the pot and cook until browned on all sides.
  4. Add the canned tomatoes, red wine, tomato paste, rosemary, and basil to the pot. Season with salt and pepper.
  5. Cover the pot and let it simmer on low heat for an hour, or until the pork is tender and the flavors are well combined.
  6. Remove the rosemary sprig, shred the pork in the pot using two forks. Stir well to combine the meat with the sauce.
  7. Serve the ragu over cooked pasta and garnish with fresh basil. Buon Appetito!
