
Hearty Vegetable Hash Skillet

Ingredients:
- 2 tablespoons Olive oil
- 2 medium Sweet potatoes
- 1 large Bell pepper
- 1 medium Zucchini
- 1 medium Onion
- 3 Garlic cloves
- 4 Eggs
- 1 cup Cheddar cheese
- to taste Salt and pepper
Instructions:
- Preheat a large skillet over medium heat and add olive oil.
- Peel and dice the sweet potatoes, bell pepper, zucchini, and onion. Mince the garlic.
- Add the sweet potatoes, bell pepper, zucchini, onion, and garlic to the skillet. Season with salt and pepper. Cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
- Make four wells in the vegetables. Crack an egg into each well and cover the skillet. Cook for about 5-7 minutes, or until the eggs are cooked to your liking.
- Sprinkle the shredded cheddar cheese over the top, cover again, and cook until the cheese is melted, about 2-3 minutes.
- Serve warm and enjoy this hearty and comforting vegetable hash skillet.
