Hearty Vegetable Hash Skillet

Ingredients:

  • 2 tablespoons Olive oil
  • 2 medium Sweet potatoes
  • 1 large Bell pepper
  • 1 medium Zucchini
  • 1 medium Onion
  • 3 Garlic cloves
  • 4 Eggs
  • 1 cup Cheddar cheese
  • to taste Salt and pepper

Instructions:

  1. Preheat a large skillet over medium heat and add olive oil.
  2. Peel and dice the sweet potatoes, bell pepper, zucchini, and onion. Mince the garlic.
  3. Add the sweet potatoes, bell pepper, zucchini, onion, and garlic to the skillet. Season with salt and pepper. Cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
  4. Make four wells in the vegetables. Crack an egg into each well and cover the skillet. Cook for about 5-7 minutes, or until the eggs are cooked to your liking.
  5. Sprinkle the shredded cheddar cheese over the top, cover again, and cook until the cheese is melted, about 2-3 minutes.
  6. Serve warm and enjoy this hearty and comforting vegetable hash skillet.
