
Hearty Multigrain Pasta Salad

Ingredients:
- 500 grams Multigrain pasta
- 200 grams Cherry tomatoes
- 2 cups Baby spinach
- 100 grams Feta cheese
- 3 tablespoons Olive oil
- 2 tablespoons Lemon juice
- To taste Salt and black pepper
Instructions:
- 1. Cook the pasta according to packet instructions until al dente, then drain and set aside to cool.
- 2. While the pasta is cooling, cut the cherry tomatoes in half and chop the baby spinach.
- 3. In a large bowl, combine the cooled pasta, cherry tomatoes, baby spinach and feta cheese.
- 4. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper to make the dressing.
- 5. Drizzle the dressing over the pasta mixture and toss well to combine.
- 6. Serve the pasta salad immediately, or cover and refrigerate for up to 2 days before serving.
