Hearty Multigrain Pasta Salad

Ingredients:

  • 500 grams Multigrain pasta
  • 200 grams Cherry tomatoes
  • 2 cups Baby spinach
  • 100 grams Feta cheese
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • To taste Salt and black pepper

Instructions:

  1. 1. Cook the pasta according to packet instructions until al dente, then drain and set aside to cool.
  2. 2. While the pasta is cooling, cut the cherry tomatoes in half and chop the baby spinach.
  3. 3. In a large bowl, combine the cooled pasta, cherry tomatoes, baby spinach and feta cheese.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper to make the dressing.
  5. 5. Drizzle the dressing over the pasta mixture and toss well to combine.
  6. 6. Serve the pasta salad immediately, or cover and refrigerate for up to 2 days before serving.
