Hearty Chicken Parmesan

Ingredients:

  • 4 Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup All-purpose flour
  • 2 Eggs
  • 1 cup Panko bread crumbs
  • 1 cup Parmesan cheese
  • 2 tablespoons Canola oil
  • 2 cups Marinara sauce
  • 1.5 cups Mozzarella cheese
  • 1 tablespoon Chopped fresh basil

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Season the chicken breasts on both sides with salt and pepper.
  3. Dredge each chicken breast in the flour and tap off excess, then dip in the beaten eggs and then dredge in the panko bread crumbs mixed with parmesan cheese.
  4. Heat the canola oil over medium-high heat and sear the chicken on both sides until golden brown, about 3 minutes per side.
  5. Pour a small amount of marinara sauce into the bottom of a baking dish. Add the seared chicken breasts on top and spoon the remaining marinara sauce over the chicken.
  6. Sprinkle the mozzarella cheese on top of the chicken and sauce.
  7. Bake until the chicken is cooked through and the cheese is melted and bubbly, about 20 minutes.
  8. Garnish with chopped fresh basil before serving.
