Healthy Whole Grain Pasta with Roasted Vegetables

Ingredients:

  • 8 oz Whole grain pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic clove
  • 1 medium-sized Zucchini
  • 1 medium-sized Yellow squash
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 2 cups Spinach
  • 1 cup Parmesan cheese
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Cut zucchini, yellow squash, and bell peppers into bite-size pieces and place them on the prepared baking sheet.
  3. Drizzle the vegetables with olive oil and season with salt, pepper, and minced garlic. Toss to coat.
  4. Roast the vegetables in the preheated oven for about 15-20 minutes, until they are tender and slightly browned.
  5. While the vegetables are roasting, cook the pasta according to the package instructions. Drain it and keep it warm.
  6. In a large bowl, toss the cooked pasta with the roasted vegetables, spinach, and parmesan cheese. Taste and adjust the seasoning if necessary.
  7. Serve the pasta with a sprinkle of extra parmesan cheese on top. Enjoy your healthy and flavorful dinner!
