
Healthy Whole Grain Pasta with Roasted Vegetables

Ingredients:
- 8 oz Whole grain pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic clove
- 1 medium-sized Zucchini
- 1 medium-sized Yellow squash
- 1 large Red bell pepper
- 1 large Yellow bell pepper
- 2 cups Spinach
- 1 cup Parmesan cheese
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Cut zucchini, yellow squash, and bell peppers into bite-size pieces and place them on the prepared baking sheet.
- Drizzle the vegetables with olive oil and season with salt, pepper, and minced garlic. Toss to coat.
- Roast the vegetables in the preheated oven for about 15-20 minutes, until they are tender and slightly browned.
- While the vegetables are roasting, cook the pasta according to the package instructions. Drain it and keep it warm.
- In a large bowl, toss the cooked pasta with the roasted vegetables, spinach, and parmesan cheese. Taste and adjust the seasoning if necessary.
- Serve the pasta with a sprinkle of extra parmesan cheese on top. Enjoy your healthy and flavorful dinner!
