Healthy Veggie-Loaded Tacos

Ingredients:

  • 6 pcs Soft corn tortillas
  • 1 medium-sized Zucchini
  • 1 piece Red bell pepper
  • 1 cup Fresh corn
  • 1 cup Black beans, rinsed and drained
  • 2 tablespoons Extra-virgin olive oil
  • 1 small Onion
  • 2 cloves Garlic
  • 1 teaspoon Ground cumin
  • 1 dash Crushed red pepper
  • To taste Fresh cilantro
  • To taste Fresh lime juice
  • To taste Salt and black pepper

Instructions:

  1. Start by preparing all the vegetables. Cut the zucchini and bell pepper into small, bite-sized pieces. Dice the onion and mince the garlic.
  2. Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add chopped onion and cook until it looks translucent.
  3. Add garlic, ground cumin and crushed red pepper. Stir and cook for about 30 seconds.
  4. Add the chopped zucchini, bell pepper, corn and black beans to the skillet. Cook, stirring occasionally, until the vegetables are tender and cooked through.
  5. Sprinkle with fresh cilantro, lime juice and season with salt and black pepper. Stir well to combine.
  6. Warm the tortillas in the oven or on a warm skillet. Fill each tortilla with the vegetable mixture. Serve immediately and enjoy your healthy, veggie-loaded tacos!
