
Healthy Veggie-Loaded Tacos

Ingredients:
- 6 pcs Soft corn tortillas
- 1 medium-sized Zucchini
- 1 piece Red bell pepper
- 1 cup Fresh corn
- 1 cup Black beans, rinsed and drained
- 2 tablespoons Extra-virgin olive oil
- 1 small Onion
- 2 cloves Garlic
- 1 teaspoon Ground cumin
- 1 dash Crushed red pepper
- To taste Fresh cilantro
- To taste Fresh lime juice
- To taste Salt and black pepper
Instructions:
- Start by preparing all the vegetables. Cut the zucchini and bell pepper into small, bite-sized pieces. Dice the onion and mince the garlic.
- Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add chopped onion and cook until it looks translucent.
- Add garlic, ground cumin and crushed red pepper. Stir and cook for about 30 seconds.
- Add the chopped zucchini, bell pepper, corn and black beans to the skillet. Cook, stirring occasionally, until the vegetables are tender and cooked through.
- Sprinkle with fresh cilantro, lime juice and season with salt and black pepper. Stir well to combine.
- Warm the tortillas in the oven or on a warm skillet. Fill each tortilla with the vegetable mixture. Serve immediately and enjoy your healthy, veggie-loaded tacos!
