Healthy Vegetable Quinoa Scramble

Ingredients:

  • 1 cup Quinoa
  • 1 cup, chopped Bell peppers
  • 1 medium, chopped Onion
  • 1 medium, chopped Zucchini
  • 4 Eggs
  • 2 tbsp Olive oil
  • To taste Salt and pepper

Instructions:

  1. Firstly, rinse the quinoa under cold water and drain. Cook according to the package instructions.
  2. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the onions and peppers to the skillet and cook until they begin to soften. Add the zucchini and cook until tender.
  4. In a separate bowl, beat the eggs and then pour over the cooked vegetables in the skillet.
  5. Stir in the cooked quinoa. Season with salt and pepper.
  6. Continue to cook, stirring occasionally, until the eggs are scrambled and everything is well combined.
  7. Serve the quinoa scramble hot. Enjoy your healthy breakfast!
