
Healthy Vegetable Quinoa Scramble

Ingredients:
- 1 cup Quinoa
- 1 cup, chopped Bell peppers
- 1 medium, chopped Onion
- 1 medium, chopped Zucchini
- 4 Eggs
- 2 tbsp Olive oil
- To taste Salt and pepper
Instructions:
- Firstly, rinse the quinoa under cold water and drain. Cook according to the package instructions.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat.
- Add the onions and peppers to the skillet and cook until they begin to soften. Add the zucchini and cook until tender.
- In a separate bowl, beat the eggs and then pour over the cooked vegetables in the skillet.
- Stir in the cooked quinoa. Season with salt and pepper.
- Continue to cook, stirring occasionally, until the eggs are scrambled and everything is well combined.
- Serve the quinoa scramble hot. Enjoy your healthy breakfast!
