Healthy Vegetable Frittata

Ingredients:

  • 6 whole Eggs
  • 1/2 cup Skim milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium-sized Onion
  • 2 medium-sized Bell peppers
  • 2 cups Spinach
  • 1/2 cup Cherry tomatoes
  • 1/2 cup Reduced-fat cheddar cheese

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, whisk together the eggs, skim milk, salt, and black pepper. Set aside.
  3. Heat the olive oil over medium heat in a large oven-safe skillet. Add the onion and bell peppers. Cook until the vegetables are tender, about 5 minutes.
  4. Add the spinach and tomatoes to the skillet. Cook until the spinach wilts, about 2 minutes.
  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle the cheese over top.
  6. Transfer the skillet to the preheated oven. Bake for 20 minutes, or until the eggs are set and the cheese is melted and bubbly.
  7. Let the frittata cool for a few minutes before slicing and serving.
