
Healthy Vegetable Frittata

Ingredients:
- 6 whole Eggs
- 1/2 cup Skim milk
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 tablespoon Olive oil
- 1 medium-sized Onion
- 2 medium-sized Bell peppers
- 2 cups Spinach
- 1/2 cup Cherry tomatoes
- 1/2 cup Reduced-fat cheddar cheese
Instructions:
- Preheat the oven to 375 degrees F.
- In a large bowl, whisk together the eggs, skim milk, salt, and black pepper. Set aside.
- Heat the olive oil over medium heat in a large oven-safe skillet. Add the onion and bell peppers. Cook until the vegetables are tender, about 5 minutes.
- Add the spinach and tomatoes to the skillet. Cook until the spinach wilts, about 2 minutes.
- Pour the egg mixture over the vegetables in the skillet. Sprinkle the cheese over top.
- Transfer the skillet to the preheated oven. Bake for 20 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Let the frittata cool for a few minutes before slicing and serving.
