
Healthy Thai Seafood Stir-fry

Ingredients:
- 400 grams Mixed Seafood (prawns, scallops, squid)
- 3 cloves Garlic
- 1 large Red bell peppers
- 2 handfuls Snow peas
- 100 grams Baby Corn
- 2 handfuls Thai basil leaves
- 2 tbsp Vegetable oil
- 2 tbsp Soy sauce
- 1 tsp Fish sauce
- 1 tsp Brown sugar
- 1 tbsp Lime Juice
- 1 tsp Red chili flakes
- 2 cups Brown rice
Instructions:
- Begin by cooking the brown rice according to the package instructions.
- While the rice is cooking, clean and prepare all the seafood.
- Chop the garlic and red bell peppers.
- Heat the oil in a pan over medium heat. Add the garlic and stir-fry until golden (about a minute).
- Add the seafood to the pan and stir-fry for about 2-3 minutes or until almost cooked through.
- Toss in the red bell peppers, snow peas, baby corn, and stir-fry for another 2 minutes.
- In a small bowl, mix together the soy sauce, fish sauce, brown sugar, lime juice, and red chili flakes.
- Pour the sauce into the pan and toss everything to combine.
- Toss in the Thai basil leaves and cook for another minute.
- Serve the stir-fry over the brown rice.
