Healthy Thai Seafood Stir-fry

Ingredients:

  • 400 grams Mixed Seafood (prawns, scallops, squid)
  • 3 cloves Garlic
  • 1 large Red bell peppers
  • 2 handfuls Snow peas
  • 100 grams Baby Corn
  • 2 handfuls Thai basil leaves
  • 2 tbsp Vegetable oil
  • 2 tbsp Soy sauce
  • 1 tsp Fish sauce
  • 1 tsp Brown sugar
  • 1 tbsp Lime Juice
  • 1 tsp Red chili flakes
  • 2 cups Brown rice

Instructions:

  1. Begin by cooking the brown rice according to the package instructions.
  2. While the rice is cooking, clean and prepare all the seafood.
  3. Chop the garlic and red bell peppers.
  4. Heat the oil in a pan over medium heat. Add the garlic and stir-fry until golden (about a minute).
  5. Add the seafood to the pan and stir-fry for about 2-3 minutes or until almost cooked through.
  6. Toss in the red bell peppers, snow peas, baby corn, and stir-fry for another 2 minutes.
  7. In a small bowl, mix together the soy sauce, fish sauce, brown sugar, lime juice, and red chili flakes.
  8. Pour the sauce into the pan and toss everything to combine.
  9. Toss in the Thai basil leaves and cook for another minute.
  10. Serve the stir-fry over the brown rice.
