Healthy Thai Pork Stir Fry

Ingredients:

  • 1 pound Pork tenderloin
  • 2 tablespoons Vegetable oil
  • 2 whole Bell peppers
  • 2 whole Carrots
  • 2 cloves Garlic
  • 1/4 cup Soy Sauce (low-sodium)
  • 1 tablespoon Fresh lime juice
  • 1 tablespoon Brown sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Cold water
  • 1/2 cup Fresh Thai basil leaves

Instructions:

  1. Thinly slice pork tenderloin and set aside.
  2. Heat a large wok or frying pan over medium heat. Add vegetable oil.
  3. Add the sliced pork to the pan and stir-fry for 5 minutes, until meat is no longer pink.
  4. Slice bell peppers and carrots into thin strips. Mince garlic cloves. Add vegetables to the pan and stir-fry for another 5 minutes, until vegetables are slightly softened.
  5. In a small bowl, combine low-sodium soy sauce, lime juice, brown sugar, cornstarch, and cold water. Mix until smooth.
  6. Pour the sauce mixture over the stir-fry in the pan. Toss to coat all ingredients well.
  7. Let the stir-fry simmer for 2 - 3 minutes until the sauce has thickened slightly.
  8. Add the fresh Thai basil and toss one more time to incorporate.
  9. Serve immediately over steamed brown rice or whole grain noodles if desired.
