
Healthy Thai Pork Stir Fry

Ingredients:
- 1 pound Pork tenderloin
- 2 tablespoons Vegetable oil
- 2 whole Bell peppers
- 2 whole Carrots
- 2 cloves Garlic
- 1/4 cup Soy Sauce (low-sodium)
- 1 tablespoon Fresh lime juice
- 1 tablespoon Brown sugar
- 1 tablespoon Cornstarch
- 1 tablespoon Cold water
- 1/2 cup Fresh Thai basil leaves
Instructions:
- Thinly slice pork tenderloin and set aside.
- Heat a large wok or frying pan over medium heat. Add vegetable oil.
- Add the sliced pork to the pan and stir-fry for 5 minutes, until meat is no longer pink.
- Slice bell peppers and carrots into thin strips. Mince garlic cloves. Add vegetables to the pan and stir-fry for another 5 minutes, until vegetables are slightly softened.
- In a small bowl, combine low-sodium soy sauce, lime juice, brown sugar, cornstarch, and cold water. Mix until smooth.
- Pour the sauce mixture over the stir-fry in the pan. Toss to coat all ingredients well.
- Let the stir-fry simmer for 2 - 3 minutes until the sauce has thickened slightly.
- Add the fresh Thai basil and toss one more time to incorporate.
- Serve immediately over steamed brown rice or whole grain noodles if desired.
