
Healthy Thai Larb Salad with Pork

Ingredients:
- 500 grams Ground Pork
- 4 tablespoons Lime Juice
- 2 tablespoons Fish Sauce
- 0.5 teaspoons Chili Flakes
- 2 medium-sized Shallots
- 50 grams Fresh Mint Leaves
- 50 grams Fresh Cilantro Leaves
- 8 large Cabbage Leaves
Instructions:
- 1. Heat a pan over medium heat and add the ground pork, breaking it into small pieces. Cook until it's fully browned and no longer pink.
- 2. Meanwhile, in a bowl, mix lime juice, fish sauce and chili flakes until well combined.
- 3. Finely slice the shallots and add them into the bowl.
- 4. Once the pork is cooked, drain off any excess fat from the pan. Add the lime juice mixture and cook for another 2 minutes.
- 5. Remove the pan from heat and stir in the mint and cilantro leaves.
- 6. To serve, spoon the pork mixture onto cabbage leaves. Garnish with extra mint and cilantro if desired.
