Healthy Thai Beef Stir-Fry

Ingredients:

  • 500 grams lean beef steak, thinly sliced
  • 4 cloves fresh garlic, minced
  • 1 whole red bell pepper, sliced
  • 1 whole carrot, sliced
  • 1 cup snap peas, halved
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon chili flakes
  • 1 tablespoon sesame oil
  • 1 handful fresh basil, chopped

Instructions:

  1. Heat the sesame oil in a large wok or skillet over medium-high heat.
  2. Add the minced garlic and beef strips, stir-frying for about 3-4 minutes until the beef is nearly cooked.
  3. Add the sliced red bell pepper, carrot and snap peas to the wok, stir-frying for another 2-3 minutes.
  4. In a small bowl, whisk together the soy sauce, lime juice, honey, and chili flakes to create the sauce.
  5. Pour the sauce over the stir-fry, tossing everything together to evenly coat, let cook for 2 more minutes.
  6. Turn off the heat and stir in the fresh chopped basil, then serve the stir-fry over steamed rice or noodles.
