
Healthy Thai Beef Salad

Ingredients:
- 500 grams Beef sirloin steak
- 3 tablespoons Lime juice
- 2 tablespoons Fish sauce
- 1 tablespoon Brown sugar low
- 1 teaspoon Chili flakes
- 1 Garlic clove minced
- 4 cups Mix of salad greens (lettuce, cabbage, carrots, cucumber)
- 1/4 cup Fresh mint leaves
- 1/4 cup Fresh cilantro leaves
- 1/2 Red onion thinly sliced
- 1 cup Cherry tomatoes halved
Instructions:
- First prepare the dressing by mixing lime juice, fish sauce, brown sugar, chili flakes, and garlic in a small bowl. Set aside for the flavors to meld together.
- Heat a grilling pan or barbecue on high heat. Season the beef on both sides with a bit of the dressing and grill for 3-4 minutes each side or until cooked to your liking. Let it rest for a few minutes then slice thinly.
- In a large bowl, combine salad greens, mint, cilantro, red onion, and cherry tomatoes. Toss with the remaining dressing.
- Place the salad on 4 plates, top with the sliced grilled beef. Serve immediately for a light and healthy lunch!
