Healthy Thai Beef Salad

Ingredients:

  • 500 grams Beef sirloin steak
  • 3 tablespoons Lime juice
  • 2 tablespoons Fish sauce
  • 1 tablespoon Brown sugar low
  • 1 teaspoon Chili flakes
  • 1 Garlic clove minced
  • 4 cups Mix of salad greens (lettuce, cabbage, carrots, cucumber)
  • 1/4 cup Fresh mint leaves
  • 1/4 cup Fresh cilantro leaves
  • 1/2 Red onion thinly sliced
  • 1 cup Cherry tomatoes halved

Instructions:

  1. First prepare the dressing by mixing lime juice, fish sauce, brown sugar, chili flakes, and garlic in a small bowl. Set aside for the flavors to meld together.
  2. Heat a grilling pan or barbecue on high heat. Season the beef on both sides with a bit of the dressing and grill for 3-4 minutes each side or until cooked to your liking. Let it rest for a few minutes then slice thinly.
  3. In a large bowl, combine salad greens, mint, cilantro, red onion, and cherry tomatoes. Toss with the remaining dressing.
  4. Place the salad on 4 plates, top with the sliced grilled beef. Serve immediately for a light and healthy lunch!
