
Healthy Thai Basil Fried Rice

Ingredients:
- 2 cups Jasmine rice
- 3 tablespoons Vegetable oil
- 2 Eggs
- 1 cup chopped Green beans
- 1 large, diced Carrot
- 3 cloves minced Garlic
- 2 chopped Bird eye chilies
- 3 tablespoons Soy sauce
- 1 tablespoon Fish sauce
- 1 cup Fresh Thai basil leaves
Instructions:
- Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, then set it aside and allow it to cool.
- Heat one tablespoon of vegetable oil in a large pan or wok over medium heat. Beat the eggs, add them to the pan and scramble. Once the eggs are cooked, remove them from the pan and set aside.
- Add the remaining oil to the pan, then add the green beans and carrot. Stir fry for 3-4 minutes, until the vegetables are tender.
- Add the garlic and bird eye chilies to the pan. Continue to stir fry for another 2 minutes.
- Increase the heat to high, then add the cooked rice to the pan. Stir quickly to prevent the rice from sticking to the pan.
- Pour over the soy sauce and fish sauce. Continue to stir until the sauces are well mixed with the rice.
- Return the scrambled eggs to the pan and mix them thoroughly with the rice.
- Remove the pan from the heat, then add the basil leaves. Stir until the basil is just wilted.
- Serve the Thai basil fried rice hot, garnished with extra basil leaves if desired.
