Healthy Thai Basil Fried Rice

Ingredients:

  • 2 cups Jasmine rice
  • 3 tablespoons Vegetable oil
  • 2 Eggs
  • 1 cup chopped Green beans
  • 1 large, diced Carrot
  • 3 cloves minced Garlic
  • 2 chopped Bird eye chilies
  • 3 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 1 cup Fresh Thai basil leaves

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, then set it aside and allow it to cool.
  2. Heat one tablespoon of vegetable oil in a large pan or wok over medium heat. Beat the eggs, add them to the pan and scramble. Once the eggs are cooked, remove them from the pan and set aside.
  3. Add the remaining oil to the pan, then add the green beans and carrot. Stir fry for 3-4 minutes, until the vegetables are tender.
  4. Add the garlic and bird eye chilies to the pan. Continue to stir fry for another 2 minutes.
  5. Increase the heat to high, then add the cooked rice to the pan. Stir quickly to prevent the rice from sticking to the pan.
  6. Pour over the soy sauce and fish sauce. Continue to stir until the sauces are well mixed with the rice.
  7. Return the scrambled eggs to the pan and mix them thoroughly with the rice.
  8. Remove the pan from the heat, then add the basil leaves. Stir until the basil is just wilted.
  9. Serve the Thai basil fried rice hot, garnished with extra basil leaves if desired.
