Healthy Thai Basil Egg Scramble

Ingredients:

  • 8 Eggs
  • 1 cup Fresh basil leaves
  • 1 teaspoon Chili flakes
  • 2 tablespoons Soy sauce
  • 3 cloves Garlic
  • 1 tablespoon Vegetable oil
  • 2 stalks Spring onion

Instructions:

  1. Begin by whisking the eggs in a bowl and set aside.
  2. Heat the vegetable oil in a non-stick pan on medium heat.
  3. Finely chop the garlic and spring onions. Add to the pan and fry until they become aromatic.
  4. Pour the beaten eggs into the pan, stir gently. Add the soy sauce and chili flakes.
  5. Just before the eggs are fully cooked, add the fresh basil leaves. Stir for an additional minute until the leaves wilt and the eggs are well-scrambled yet moist.
