
Healthy Shrimp and Vegetable Stir-fry

Ingredients:
- 16 pieces shrimp
- 1 cup broccoli
- 1 cup carrots
- 1 cup bell peppers
- 2 tablespoons soy sauce
- 1 teaspoon cornstarch
- a small knob grated fresh ginger
- 1 clove garlic
- 1 tablespoon olive oil
- 1 cup steamed brown rice
Instructions:
- 1. Clean the shrimp and set aside.
- 2. Chop the vegetables into bite-sized pieces.
- 3. Heat a pan over medium heat and add the olive oil.
- 4. Sauté the garlic and ginger until fragrant.
- 5. Add the shrimp and stir-fry until they turn pink.
- 6. Add the vegetables and keep stir-frying for about 2-3 minutes.
- 7. Mix the soy sauce and cornstarch together in a separate bowl, then add it to the pan.
- 8. Stir until all ingredients are coated in the sauce and it has thickened slightly.
- 9. Serve the stir-fry over steamed brown rice.
