Healthy Shrimp and Vegetable Stir-fry

Ingredients:

  • 16 pieces shrimp
  • 1 cup broccoli
  • 1 cup carrots
  • 1 cup bell peppers
  • 2 tablespoons soy sauce
  • 1 teaspoon cornstarch
  • a small knob grated fresh ginger
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1 cup steamed brown rice

Instructions:

  1. 1. Clean the shrimp and set aside.
  2. 2. Chop the vegetables into bite-sized pieces.
  3. 3. Heat a pan over medium heat and add the olive oil.
  4. 4. Sauté the garlic and ginger until fragrant.
  5. 5. Add the shrimp and stir-fry until they turn pink.
  6. 6. Add the vegetables and keep stir-frying for about 2-3 minutes.
  7. 7. Mix the soy sauce and cornstarch together in a separate bowl, then add it to the pan.
  8. 8. Stir until all ingredients are coated in the sauce and it has thickened slightly.
  9. 9. Serve the stir-fry over steamed brown rice.
