Healthy Scrambled Eggs with Spinach and Tomatoes

Ingredients:

  • 4 pieces Eggs
  • 2 cups Spinach
  • 1 cup Tomatoes
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Crack the eggs into a bowl, and beat them until they blend together.
  2. Heat your skillet over medium heat and add olive oil.
  3. Add the spinach to the skillet. Cook it until it wilts, which will take about 2 minutes.
  4. Add the tomatoes to the skillet. Cook for another minute.
  5. Pour the eggs onto the skillet over the spinach and tomatoes. Stir until the eggs start to solidify. This will take about 3-4 minutes.
  6. Add salt and pepper according to taste.
  7. Serve while warm with whole grain bread if desired.
