
Healthy Scrambled Eggs with Spinach and Tomatoes

Ingredients:
- 4 pieces Eggs
- 2 cups Spinach
- 1 cup Tomatoes
- 1 tablespoon Olive oil
- to taste Salt
- to taste Pepper
Instructions:
- Crack the eggs into a bowl, and beat them until they blend together.
- Heat your skillet over medium heat and add olive oil.
- Add the spinach to the skillet. Cook it until it wilts, which will take about 2 minutes.
- Add the tomatoes to the skillet. Cook for another minute.
- Pour the eggs onto the skillet over the spinach and tomatoes. Stir until the eggs start to solidify. This will take about 3-4 minutes.
- Add salt and pepper according to taste.
- Serve while warm with whole grain bread if desired.
