Healthy Ratatouille

Ingredients:

  • 1 whole eggplant
  • 2 whole zucchini
  • 2 whole bell peppers
  • 1 whole onion
  • 3 whole tomatoes
  • 2 whole garlic cloves
  • 2 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • 1 teaspoon herbes de Provence

Instructions:

  1. Cut the eggplant, zucchini, bell peppers, onion, and tomatoes into equally sized pieces.
  2. Peel and chop the garlic cloves.
  3. Heat the olive oil in a large pot over medium heat.
  4. Add the onion and garlic, then cook until the onion is translucent.
  5. Add the eggplant, zucchini, bell peppers, and tomatoes to the pot.
  6. Stir in the salt, black pepper, and herbes de Provence.
  7. Cover the pot and let the vegetables cook for about 30 minutes, or until they are soft.
  8. Stir the vegetables occasionally to make sure they don't stick to the pot.
  9. Check for seasoning, add more salt or pepper if needed.
  10. Serve hot and enjoy your healthy late-night craving!
