Ingredients:
- 1 whole eggplant
- 2 whole zucchini
- 2 whole bell peppers
- 1 whole onion
- 3 whole tomatoes
- 2 whole garlic cloves
- 2 tablespoon olive oil
- to taste salt
- to taste black pepper
- 1 teaspoon herbes de Provence
Instructions:
- Cut the eggplant, zucchini, bell peppers, onion, and tomatoes into equally sized pieces.
- Peel and chop the garlic cloves.
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, then cook until the onion is translucent.
- Add the eggplant, zucchini, bell peppers, and tomatoes to the pot.
- Stir in the salt, black pepper, and herbes de Provence.
- Cover the pot and let the vegetables cook for about 30 minutes, or until they are soft.
- Stir the vegetables occasionally to make sure they don't stick to the pot.
- Check for seasoning, add more salt or pepper if needed.
- Serve hot and enjoy your healthy late-night craving!
