
Healthy Midnight Vegetable Pasta

Ingredients:
- 200 grams Whole wheat spaghetti
- 3 cloves Garlic
- 2 tablespoons Extra virgin olive oil
- 1 cup Mixed bell peppers
- 1 medium Zucchini
- 1 cup Cherry tomatoes
- a handful Fresh basil leaves
- to taste Salt
- to taste Black pepper
Instructions:
- Cook the spaghetti according to package instructions. Drain and set aside.
- While the pasta is cooking, finely chop the garlic, dice the mixed bell peppers and zucchini, and halve the cherry tomatoes.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until fragrant.
- Add the bell peppers and zucchini to the skillet, and cook for around 5 minutes, until they start to soften.
- Add the cherry tomatoes to the skillet, and cook for another 3-4 minutes, until they start to break down.
- Toss the cooked pasta with the sautéed vegetables. Season with salt and freshly ground black pepper to taste, and garnish with fresh basil leaves.
- Serve hot, and enjoy your healthy midnight vegetable pasta!
