Healthy Midnight Vegetable Pasta

Ingredients:

  • 200 grams Whole wheat spaghetti
  • 3 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 1 cup Mixed bell peppers
  • 1 medium Zucchini
  • 1 cup Cherry tomatoes
  • a handful Fresh basil leaves
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. While the pasta is cooking, finely chop the garlic, dice the mixed bell peppers and zucchini, and halve the cherry tomatoes.
  3. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until fragrant.
  4. Add the bell peppers and zucchini to the skillet, and cook for around 5 minutes, until they start to soften.
  5. Add the cherry tomatoes to the skillet, and cook for another 3-4 minutes, until they start to break down.
  6. Toss the cooked pasta with the sautéed vegetables. Season with salt and freshly ground black pepper to taste, and garnish with fresh basil leaves.
  7. Serve hot, and enjoy your healthy midnight vegetable pasta!
