Healthy Midnight Taco Salad

Ingredients:

  • 2 pieces Whole wheat tortillas
  • 1 cup Cooked black beans
  • 0.5 cup Cherry tomatoes
  • 1 piece Avocado
  • 0.5 cup Fresh corn kernels
  • 1 piece Lime
  • 0.5 cup Low fat cheddar cheese
  • 1 bunch Cilantro
  • 1 teaspoon Ground cumin
  • 1 pinch Salt and black pepper

Instructions:

  1. 1. Preheat your oven to 375°F (190°C) and lightly oil a baking sheet. Cut the tortillas into even strips and arrange on the sheet. Bake until crispy, 10 to 15 minutes, and set aside.
  2. 2. While the tortillas are baking, prepare the other ingredients. Dice the tomatoes and avocado, and chop up the cilantro.
  3. 3. Mix together the beans, tomatoes, avocado, corn, and half of the cilantro in a large bowl. Squeeze the lime juice over top, and sprinkle with the cumin and a good pinch of salt and pepper. Toss well to combine.
  4. 4. Scatter the cooled tortilla strips over a serving plate. Top with the salad mixture, then sprinkle with the cheese and the remaining cilantro. Serve immediately.
