Healthy Midnight Orange Chicken

Ingredients:

  • 2 pieces Chicken breasts
  • 1 cup Orange juice, freshly squeezed
  • 2 tablespoons Low-sodium soy sauce
  • 2 cloves Garlic
  • 1 tablespoon Fresh ginger
  • 1/2 teaspoon Red chili flakes
  • 1 tablespoon Olive oil
  • 2 tablespoons Honey
  • 2 stalks Green onions
  • 1 tablespoon Cornstarch

Instructions:

  1. In a bowl, combine the honey, orange juice, soy sauce, grated ginger, minced garlic, and red chili flakes.
  2. Cut the chicken into bite-sized pieces. Put them in the bowl and let them marinate for at least 10 minutes.
  3. Heat the oil in a skillet. Add the chicken pieces and saute until they are cooked through, about 7-10 minutes. Remove the chicken and set it aside.
  4. In the same skillet, pour in the remaining marinade. Bring it to a simmer.
  5. Mix cornstarch with 2 tablespoons of cold water until smooth, then add it to the skillet. Stir continuously until the sauce thickens.
  6. Put the cooked chicken back in the skillet and stir until all the pieces are coated in the sauce. Cook for an additional 2 minutes.
  7. Garnish with green onions before serving.
