
Healthy Midnight Orange Chicken

Ingredients:
- 2 pieces Chicken breasts
- 1 cup Orange juice, freshly squeezed
- 2 tablespoons Low-sodium soy sauce
- 2 cloves Garlic
- 1 tablespoon Fresh ginger
- 1/2 teaspoon Red chili flakes
- 1 tablespoon Olive oil
- 2 tablespoons Honey
- 2 stalks Green onions
- 1 tablespoon Cornstarch
Instructions:
- In a bowl, combine the honey, orange juice, soy sauce, grated ginger, minced garlic, and red chili flakes.
- Cut the chicken into bite-sized pieces. Put them in the bowl and let them marinate for at least 10 minutes.
- Heat the oil in a skillet. Add the chicken pieces and saute until they are cooked through, about 7-10 minutes. Remove the chicken and set it aside.
- In the same skillet, pour in the remaining marinade. Bring it to a simmer.
- Mix cornstarch with 2 tablespoons of cold water until smooth, then add it to the skillet. Stir continuously until the sauce thickens.
- Put the cooked chicken back in the skillet and stir until all the pieces are coated in the sauce. Cook for an additional 2 minutes.
- Garnish with green onions before serving.
