
Healthy Midnight Mexican Chicken Tacos

Ingredients:
- 1 piece Chicken breast
- 4 pieces Whole wheat tortillas
- 1/2 cup Black beans
- 1 piece Avocado
- 1/2 cup Cherry tomatoes
- 1 piece Lime
- Handful Coriander
- 1/2 teaspoon Cumin
- 1/2 teaspoon Paprika
- 1 tablespoon Olive oil
Instructions:
- Season the chicken breast with cumin, paprika, salt, and pepper.
- Heat the olive oil in a pan over medium heat. Add the chicken breast and cook for about 5-7 minutes each side, or until fully cooked. Once done, shred the chicken using two forks.
- Warm the whole wheat tortillas in a pan over medium heat for about 1 minute each side.
- Mash the avocado with a fork, add some lime juice, and season with salt and pepper
- Assemble the tacos: Spread the mashed avocado onto each tortilla, top with shredded chicken, then add black beans, cherry tomatoes, and coriander.
- Serve immediately and enjoy your healthy Mexican chicken tacos.
