Healthy Midnight Mexican Chicken Tacos

Ingredients:

  • 1 piece Chicken breast
  • 4 pieces Whole wheat tortillas
  • 1/2 cup Black beans
  • 1 piece Avocado
  • 1/2 cup Cherry tomatoes
  • 1 piece Lime
  • Handful Coriander
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1 tablespoon Olive oil

Instructions:

  1. Season the chicken breast with cumin, paprika, salt, and pepper.
  2. Heat the olive oil in a pan over medium heat. Add the chicken breast and cook for about 5-7 minutes each side, or until fully cooked. Once done, shred the chicken using two forks.
  3. Warm the whole wheat tortillas in a pan over medium heat for about 1 minute each side.
  4. Mash the avocado with a fork, add some lime juice, and season with salt and pepper
  5. Assemble the tacos: Spread the mashed avocado onto each tortilla, top with shredded chicken, then add black beans, cherry tomatoes, and coriander.
  6. Serve immediately and enjoy your healthy Mexican chicken tacos.
