Healthy Midnight French Ratatouille Pasta

Ingredients:

  • 200 grams Whole Wheat Pasta
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 small Eggplant
  • 1 small Zucchini
  • 1 medium Bell Pepper
  • 4 medium Tomatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Thyme
  • a handful fresh Basil
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Boil the pasta according to the packet instructions until it's al dente. Drain and keep aside.
  2. While pasta is boiling, chop the garlic, onion, eggplant, zucchini, bell pepper, and tomatoes into small pieces.
  3. Heat olive oil in a large pan over medium heat. Add the garlic and onion, and sauté until they start to soften.
  4. Add the eggplant, zucchini and bell pepper to the pan, and sauté for a few minutes until they start to soften.
  5. Add the chopped tomatoes, thyme, basil, salt, and pepper. Stir well, cover the pan, and let it simmer for about 20 minutes, until the vegetables are very soft and the sauce has thickened.
  6. Toss the cooked pasta into the pan with the sauce, mixing well to make sure all the pasta is coated.
  7. Serve the pasta with some fresh basil on top.
