Healthy Midnight Egg Scramble

Ingredients:

  • 4 whole Eggs
  • 1 tbsp Olive Oil
  • 2 cups Spinach
  • 1 whole Red bell pepper
  • 0.25 tsp Salt
  • 0.25 tsp Black Pepper

Instructions:

  1. In a non-stick pan, heat 1 tbsp olive oil over medium-high heat.
  2. While the pan is heating, beat 4 eggs in a bowl until well mixed.
  3. Add the spinach and chopped red bell pepper to the pan and sauté until they are soft.
  4. Lower the heat to medium, add the eggs, salt, and pepper to the pan and stir gently to combine.
  5. Cook the egg mixture, stirring occasionally, until the eggs are scrambled and fully cooked. This should take about 3-4 minutes.
