
Healthy Midnight Egg Scramble

Ingredients:
- 4 whole Eggs
- 1 tbsp Olive Oil
- 2 cups Spinach
- 1 whole Red bell pepper
- 0.25 tsp Salt
- 0.25 tsp Black Pepper
Instructions:
- In a non-stick pan, heat 1 tbsp olive oil over medium-high heat.
- While the pan is heating, beat 4 eggs in a bowl until well mixed.
- Add the spinach and chopped red bell pepper to the pan and sauté until they are soft.
- Lower the heat to medium, add the eggs, salt, and pepper to the pan and stir gently to combine.
- Cook the egg mixture, stirring occasionally, until the eggs are scrambled and fully cooked. This should take about 3-4 minutes.
