Healthy Midnight Chinese Pasta

Ingredients:

  • 200 grams whole wheat spaghetti
  • 2 cloves garlic
  • 1 inch piece fresh ginger
  • 2 tbsp low sodium soy sauce
  • 1 tbsp sesame oil
  • 1 cup colorful bell peppers
  • 0.5 cup sugar snap peas
  • 2 stalks spring onions
  • 0.5 tsp red chili flakes

Instructions:

  1. Boil the spaghetti according to the instructions on the package and set aside.
  2. In a large frying pan, heat the sesame oil over medium heat.
  3. Add finely chopped garlic and grated ginger to the pan and sauté until fragrant.
  4. Add the chopped bell peppers and sugar snap peas to the pan and stir fry for 2-3 minutes.
  5. Add the cooked spaghetti to the pan along with the soy sauce and red chili flakes. Stir well to combine.
  6. Serve hot, garnished with chopped spring onions.
