Healthy Midnight Beef Bourguignon

Ingredients:
- 500 grams Lean Beef
- 2 tablespoons Olive Oil
- 1 large Onion
- 2 medium Carrots
- 2 Garlic Cloves
- 1 sprig Thyme
- 1 Bay Leaf
- 1.5 cups Red Wine
- 2 cups Low-sodium Beef Stock
- 200 grams Mushrooms
- 1 tablespoon Whole Grain Mustard
- To garnish sprigs Parsley
Instructions:
- Dice the onions, carrots and garlic.
- Cut the beef into bite-size pieces.
- Heat the olive oil in a large pan over medium heat.
- Add beef to the pan and brown it on all sides. Remove beef and set aside.
- In the same pan, add onions, carrots, garlic, thyme and bay leaf. Cook until onions are translucent.
- Add red wine to the pan and scrape the bottom of the pan to release any browned bits. Bring to a boil and reduce the wine by half.
- Return beef to pan, add low-sodium beef broth and whole grain mustard. Simmer on low heat, covered, for about 2 hours.
- In a separate pan, saute mushrooms in a bit of oil until they are golden brown. Add mushrooms to the stew during the last half hour of cooking time.
- Check seasoning and adjust if necessary. Add a bit of chopped parsley before serving.
