Healthy Midnight Beef Bourguignon

Ingredients:

  • 500 grams Lean Beef
  • 2 tablespoons Olive Oil
  • 1 large Onion
  • 2 medium Carrots
  • 2 Garlic Cloves
  • 1 sprig Thyme
  • 1 Bay Leaf
  • 1.5 cups Red Wine
  • 2 cups Low-sodium Beef Stock
  • 200 grams Mushrooms
  • 1 tablespoon Whole Grain Mustard
  • To garnish sprigs Parsley

Instructions:

  1. Dice the onions, carrots and garlic.
  2. Cut the beef into bite-size pieces.
  3. Heat the olive oil in a large pan over medium heat.
  4. Add beef to the pan and brown it on all sides. Remove beef and set aside.
  5. In the same pan, add onions, carrots, garlic, thyme and bay leaf. Cook until onions are translucent.
  6. Add red wine to the pan and scrape the bottom of the pan to release any browned bits. Bring to a boil and reduce the wine by half.
  7. Return beef to pan, add low-sodium beef broth and whole grain mustard. Simmer on low heat, covered, for about 2 hours.
  8. In a separate pan, saute mushrooms in a bit of oil until they are golden brown. Add mushrooms to the stew during the last half hour of cooking time.
  9. Check seasoning and adjust if necessary. Add a bit of chopped parsley before serving.
