
Healthy Mexican Shrimp Breakfast Tacos

Ingredients:
- 1 pound Shrimp
- 1 teaspoon Cumin powder
- 1 teaspoon Garlic powder
- 1 teaspoon Chili powder
- 1 tablespoon Olive oil
- 8 pieces Corn tortillas
- 1 large Avocado
- 1 cup Pico de gallo
- 1 bunch Cilantro
- 1 piece Lime
Instructions:
- In a bowl, combine shrimp with cumin, garlic powder, and chili powder.
- In a large skillet, heat olive oil over medium heat.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes on each side.
- Warm the corn tortillas in a skillet or microwave.
- Mash the avocado and spread evenly on each tortilla.
- Place the cooked shrimp on top of the avocado spread.
- Top with pico de gallo and a sprinkling of fresh chopped cilantro.
- Serve with a squeeze of lime juice.
