Healthy Mexican Shrimp Breakfast Tacos

Ingredients:

  • 1 pound Shrimp
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 tablespoon Olive oil
  • 8 pieces Corn tortillas
  • 1 large Avocado
  • 1 cup Pico de gallo
  • 1 bunch Cilantro
  • 1 piece Lime

Instructions:

  1. In a bowl, combine shrimp with cumin, garlic powder, and chili powder.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the shrimp to the skillet and cook until pink, about 2-3 minutes on each side.
  4. Warm the corn tortillas in a skillet or microwave.
  5. Mash the avocado and spread evenly on each tortilla.
  6. Place the cooked shrimp on top of the avocado spread.
  7. Top with pico de gallo and a sprinkling of fresh chopped cilantro.
  8. Serve with a squeeze of lime juice.
