
Healthy Mexican Seafood Tacos

Ingredients:
- 1lb Shrimp
- 1 tbsp Olive oil
- 1 tbsp Lime zests
- 3 tbsp Lime juice
- 1 Bunch Cilantro leaves
- 2 Garlic clove
- 1 tsp Salt
- 8 Corn tortilla
- 2 Avocado
- 1 Small Red onion
- 1 Jalapeno
Instructions:
- In a mixing bowl, add shrimp, olive oil, lime zest, lime juice, chopped cilantro, minced garlic, and salt. Toss well to combine.
- Marinate the mixture in the refrigerator for 15 minutes.
- Heat a grill or skillet over medium heat. Cook the shrimps until they turn pink, typically 2-3 minutes each side.
- In the meantime, heat the corn tortillas in a pan until they are warm and slightly crispy.
- Prepare the avocado, onion, cilantro, and jalapeno slices.
- Assemble the taco by adding a few shrimps on each tortilla, followed by the sliced avocado, onion, cilantro, and jalapeno.
- Serve immediately with extra lime wedges and enjoy a healthy, zesty, and light Mexican seafood snack!
