Healthy Mexican Seafood Tacos

Ingredients:

  • 1lb Shrimp
  • 1 tbsp Olive oil
  • 1 tbsp Lime zests
  • 3 tbsp Lime juice
  • 1 Bunch Cilantro leaves
  • 2 Garlic clove
  • 1 tsp Salt
  • 8 Corn tortilla
  • 2 Avocado
  • 1 Small Red onion
  • 1 Jalapeno

Instructions:

  1. In a mixing bowl, add shrimp, olive oil, lime zest, lime juice, chopped cilantro, minced garlic, and salt. Toss well to combine.
  2. Marinate the mixture in the refrigerator for 15 minutes.
  3. Heat a grill or skillet over medium heat. Cook the shrimps until they turn pink, typically 2-3 minutes each side.
  4. In the meantime, heat the corn tortillas in a pan until they are warm and slightly crispy.
  5. Prepare the avocado, onion, cilantro, and jalapeno slices.
  6. Assemble the taco by adding a few shrimps on each tortilla, followed by the sliced avocado, onion, cilantro, and jalapeno.
  7. Serve immediately with extra lime wedges and enjoy a healthy, zesty, and light Mexican seafood snack!
