Healthy Mexican Scrambled Eggs

Ingredients:

  • 4 pcs Eggs
  • 2 medium Tomatoes
  • 1 small Onion
  • 1 small Jalapeno pepper
  • 1 medium Avocado
  • 1 pcs Lime
  • A handful Fresh coriander leaves
  • To taste Salt
  • To taste Black pepper
  • 1 tbsp Olive oil

Instructions:

  1. Finely chop the tomatoes, onion, jalapeno pepper, and coriander leaves. Set aside.
  2. Slice the avocado and drizzle it with lime juice. Set aside.
  3. In a bowl, whisk the eggs, then stir in the chopped tomatoes, onion, jalapeno pepper, and most of the coriander leaves. Season with salt and black pepper.
  4. Heat the olive oil in a non-stick frying pan over medium heat. Pour in the egg mixture and stir gently until the eggs are cooked.
  5. Serve the scrambled eggs garnished with the avocado slices and the remaining coriander leaves. Enjoy your healthy Mexican Scrambled Eggs!
