
Healthy Mexican Scrambled Eggs

Ingredients:
- 4 pcs Eggs
- 2 medium Tomatoes
- 1 small Onion
- 1 small Jalapeno pepper
- 1 medium Avocado
- 1 pcs Lime
- A handful Fresh coriander leaves
- To taste Salt
- To taste Black pepper
- 1 tbsp Olive oil
Instructions:
- Finely chop the tomatoes, onion, jalapeno pepper, and coriander leaves. Set aside.
- Slice the avocado and drizzle it with lime juice. Set aside.
- In a bowl, whisk the eggs, then stir in the chopped tomatoes, onion, jalapeno pepper, and most of the coriander leaves. Season with salt and black pepper.
- Heat the olive oil in a non-stick frying pan over medium heat. Pour in the egg mixture and stir gently until the eggs are cooked.
- Serve the scrambled eggs garnished with the avocado slices and the remaining coriander leaves. Enjoy your healthy Mexican Scrambled Eggs!
