
Healthy Mexican Rice Bowl

Ingredients:
- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 medium onion
- 2 garlic cloves
- 1 red bell pepper
- 1 cup black beans, canned and drained
- 1 cup corn
- 1 large tomato
- 1 medium avocado
- 1 medium lime
- 1/4 cup cilantro
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- to taste salt
- to taste black pepper
Instructions:
- Rinse the rice under cold water until the water runs clear. Combine the rice and water in a saucepan. Bring to a boil, then cover and reduce the heat to low. Simmer for 45 minutes, or until the rice is tender.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and bell pepper and cook until tender.
- Add the beans, corn, and spices to the skillet. Stir well and cook until heated through.
- Dice the tomato and avocado, and chop the cilantro. Cut the lime into wedges.
- Fluff the cooked rice with a fork and divide it between four bowls. Top each bowl with the vegetable-bean mixture, then the tomato, avocado, and cilantro.
- Squeeze a lime wedge over each bowl, and serve.
