Healthy Mexican Rice Bowl

Ingredients:

  • 1 cup brown rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 1 red bell pepper
  • 1 cup black beans, canned and drained
  • 1 cup corn
  • 1 large tomato
  • 1 medium avocado
  • 1 medium lime
  • 1/4 cup cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste salt
  • to taste black pepper

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Combine the rice and water in a saucepan. Bring to a boil, then cover and reduce the heat to low. Simmer for 45 minutes, or until the rice is tender.
  2. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and bell pepper and cook until tender.
  3. Add the beans, corn, and spices to the skillet. Stir well and cook until heated through.
  4. Dice the tomato and avocado, and chop the cilantro. Cut the lime into wedges.
  5. Fluff the cooked rice with a fork and divide it between four bowls. Top each bowl with the vegetable-bean mixture, then the tomato, avocado, and cilantro.
  6. Squeeze a lime wedge over each bowl, and serve.
