
Healthy Mexican Pork Tacos

Ingredients:
- 1 pound Pork tenderloin
- 1 tablespoon Extra Virgin Olive Oil
- 1 teaspoon Ground cumin
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Chili powder
- 1/2 teaspoon Oregano
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 4 Whole wheat tortillas
- 1/4 cup Fresh cilantro, chopped
- 1 small Red onion, diced
- 1 Avocado, sliced
- 1 Lime, cut into wedges
Instructions:
- Cut the pork into thin slices and season with cumin, garlic powder, chili powder, oregano, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook for about 5-7 minutes, or until the meat is cooked through.
- While the pork is cooking, warm up the tortillas on a dry skillet over medium heat until they are soft and pliable.
- Assemble the tacos by placing a portion of the cooked pork on each tortilla. Top with diced red onion, sliced avocado, and chopped cilantro.
- Serve the tacos with lime wedges on the side for squeezing.
