Healthy Mexican Pork Tacos

Ingredients:

  • 1 pound Pork tenderloin
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 4 Whole wheat tortillas
  • 1/4 cup Fresh cilantro, chopped
  • 1 small Red onion, diced
  • 1 Avocado, sliced
  • 1 Lime, cut into wedges

Instructions:

  1. Cut the pork into thin slices and season with cumin, garlic powder, chili powder, oregano, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook for about 5-7 minutes, or until the meat is cooked through.
  3. While the pork is cooking, warm up the tortillas on a dry skillet over medium heat until they are soft and pliable.
  4. Assemble the tacos by placing a portion of the cooked pork on each tortilla. Top with diced red onion, sliced avocado, and chopped cilantro.
  5. Serve the tacos with lime wedges on the side for squeezing.
