
Healthy Mexican Pasta Salad

Ingredients:
- 2 cups Whole wheat fusilli pasta
- 2 tablespoons Olive oil
- 1 cup Cherry tomatoes
- 1 cup Black beans
- 1 cup Corn kernels
- 1 medium Avocado
- 1/4 cup Fresh cilantro
- 2 tablespoons Fresh lime juice
- 1 teaspoon Ground cumin
- to taste Salt and pepper
Instructions:
- Boil the pasta according to package instructions until al dente, then drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, tomatoes, black beans, corn, and chopped avocado.
- In a small bowl, mix together the olive oil, lime juice, cumin, salt, and pepper to create the dressing.
- Pour the dressing over the pasta mixture and toss until well combined.
