Healthy Mexican Pasta Salad

Ingredients:

  • 2 cups Whole wheat fusilli pasta
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 medium Avocado
  • 1/4 cup Fresh cilantro
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Ground cumin
  • to taste Salt and pepper

Instructions:

  1. Boil the pasta according to package instructions until al dente, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, tomatoes, black beans, corn, and chopped avocado.
  3. In a small bowl, mix together the olive oil, lime juice, cumin, salt, and pepper to create the dressing.
  4. Pour the dressing over the pasta mixture and toss until well combined.
