Healthy Mexican Egg Tacos

Ingredients:

  • 4 Whole Eggs
  • 1 Tbsp Olive Oil
  • 4 Whole Whole Wheat Tortillas
  • 0.5 Cup Fresh Salsa
  • 1 Whole Avocado
  • 0.5 Cup Black Beans
  • 1 Whole Lime
  • To Taste Whole Cilantro
  • To Taste Salt and Pepper

Instructions:

  1. 1. Heat olive oil in a pan over medium heat.
  2. 2. Crack the eggs into the pan and scramble them until they are fully cooked.
  3. 3. Warm up the whole wheat tortillas either on a griddle or in the microwave for about 30 seconds.
  4. 4. Divide the scrambled eggs evenly and place them on each tortilla.
  5. 5. Top each tortilla with fresh salsa, slices of avocado and black beans.
  6. 6. Squeeze lime juice over the top, then sprinkle with cilantro, salt and pepper.
  7. 7. Serve immediately.
