
Healthy Mexican Egg Tacos

Ingredients:
- 4 Whole Eggs
- 1 Tbsp Olive Oil
- 4 Whole Whole Wheat Tortillas
- 0.5 Cup Fresh Salsa
- 1 Whole Avocado
- 0.5 Cup Black Beans
- 1 Whole Lime
- To Taste Whole Cilantro
- To Taste Salt and Pepper
Instructions:
- 1. Heat olive oil in a pan over medium heat.
- 2. Crack the eggs into the pan and scramble them until they are fully cooked.
- 3. Warm up the whole wheat tortillas either on a griddle or in the microwave for about 30 seconds.
- 4. Divide the scrambled eggs evenly and place them on each tortilla.
- 5. Top each tortilla with fresh salsa, slices of avocado and black beans.
- 6. Squeeze lime juice over the top, then sprinkle with cilantro, salt and pepper.
- 7. Serve immediately.
