Healthy Mexican Egg Skillet

Ingredients:

  • 4 Eggs
  • 1 tablespoon Olive oil
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Onion
  • 2 Garlic cloves
  • 1 cup Black beans
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 Avocado
  • 1 cup Cherry tomatoes
  • handful Coriander leaves

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chopped bell peppers, onion, and garlic and sauté for 5 minutes.
  2. Add the black beans to the skillet along with the cumin and chili powder. Stir well and cook for another 5 minutes.
  3. Crack the eggs over the skillet, trying to distribute them evenly over the vegetable mixture. Cover the skillet and let the eggs cook for 5-7 minutes or until they’re done to your preference.
  4. Season with salt, pepper, and additional cumin and chili powder if desired. Serve the skillet topped with sliced avocado, cherry tomatoes, and fresh coriander leaves.
