
Healthy Mexican Egg Skillet

Ingredients:
- 4 Eggs
- 1 tablespoon Olive oil
- 1 Red bell pepper
- 1 Green bell pepper
- 1 Onion
- 2 Garlic cloves
- 1 cup Black beans
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 0.5 teaspoon Salt
- 0.5 teaspoon Pepper
- 1 Avocado
- 1 cup Cherry tomatoes
- handful Coriander leaves
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the chopped bell peppers, onion, and garlic and sauté for 5 minutes.
- Add the black beans to the skillet along with the cumin and chili powder. Stir well and cook for another 5 minutes.
- Crack the eggs over the skillet, trying to distribute them evenly over the vegetable mixture. Cover the skillet and let the eggs cook for 5-7 minutes or until they’re done to your preference.
- Season with salt, pepper, and additional cumin and chili powder if desired. Serve the skillet topped with sliced avocado, cherry tomatoes, and fresh coriander leaves.
