Healthy Mexican Chicken Wrap

Ingredients:

  • 2 whole Chicken breast
  • 4 Wholegrain wraps
  • 1 whole Red bell pepper
  • 1 whole Yellow bell pepper
  • 1 cup Black beans
  • 1/2 cup Sweet corn
  • 2 whole Avocado
  • 1 whole Lime
  • Handful Cilantro
  • 1 Tablespoon Olive oil
  • to taste Salt and Pepper

Instructions:

  1. Begin by heating the olive oil in a frying pan. Add the chicken breast and cook until golden brown and no longer pink in the middle. Remove from the pan and set aside to rest.
  2. In the same pan, add the sliced red and yellow bell peppers, black beans and corn. Cook for 5-7 minutes until the vegetables are soft.
  3. Slice the cooked chicken breast and add it back to the pan, stirring to combine with the vegetables.
  4. Mash the avocados in a bowl, add the juice of the lime and a handful of chopped cilantro, and mix well.
  5. Season the chicken and vegetable mix with salt and pepper to taste.
  6. Warm the wholegrain wraps in the oven or microwave following the pack instructions.
  7. Spread a generous amount of the avocado mix onto the middle of each wrap. Top with the chicken and vegetable mix.
  8. Fold the wraps tightly, ensuring all sides are closed, and serve. Enjoy your healthy Mexican chicken wrap!
